Recipe

Starting ingredients

  • 50g White flour
  • 20g Dark rye flour
  • 70g Water
  • 70g Starter

Feeding ingredients

In the water at room temperature dilute the starter, then add-in the flours and mix one minute.

Working method

White unenriched flour (70%) and Organic Dark Rye flour (30%) added in equal weight to my starter, together with same amount of water.
50g White flour 20g Dark rye flour 70g Water 70g Starter

I usually use whole wheat flour for loaves.
