My father who I saw very little of growing up made sourdough a lot. Although we don't speak much now I do think I originally started making sourdough to feel more connected to him. Now, it's evolved into something I do for myself. It's important to me.
My starter is super active. My loaves tend to really get nice oven spring, have a light and airy texture with a slightly sour flavor. It smells sour but not as strong as nail polish.
