I make a goals list every year on my birthday and creating a starter was on my 30 goals for 30 years list. Quarantining because of COVID-19 freed up some time for me to give it a shot.

Characteristics

Ned has a bubbly personality, with big, airy bubbles. He loves to eat and expands rapidly when he does. He is incredibly tangy and delicious!

I try to feed Ned once a day, sometimes twice if I bake with him. The temperature fluctuates quite a bit in the Northeast United States. We've had a very warm, humid summer so far, which Ned loves. Our winters are quite cold and harsh so we'll see how he does come fall and winter!

I typically feed Ned 1/2 cup of King Arthur bread flour and 1/4 cup of filtered water. If I use a lot of starter for a recipe and need to replace more, my ratio is adding half the amount of water than flour. Sometimes these ratios need to adjusted to get the consistency right. I aim for Ned to be the thickness of Greek yogurt.
