I love bread. It is hard to find good bread in the stores near where I live. I care a lot about the ingredients that go into the food that I prepare and eat, so I decided that making my own would be the best way to get good bread on a regular basis.

Characteristics

It has a mild yeasty smell, and gives the bread a slight sour tang.

Recipe

Starting ingredients

  • 100% Starter
  • 100% Bread flour
  • 50% Water

Feeding ingredients

  • 100% Starter
  • 100% Bread flour
  • 50% Water

Add water to starter. Stir to make a slush. Add flour. Knead by hand when it gets too stiff to stir. Round it up. Cover.

Working method

I feed my starter with bread flour and water, and it sleeps in the fridge most of the time. When I want to bake some bread, I awaken it by feeding for 2-3 days before I use it to help make my bread.
