She is mild in flavor with good strength. She produces nice loaves of bread from a simple boules to cinnamon raisin bread and honey oatmeal loaves

I usually take it from the refrigerator and let it sit for 2-3 hours before I feed her. She us usually bubbling and passes the float test about 3 hours later.
