I just started baking during lockdown because I like bread and I was annoyed I couldn’t make it.

Characteristics

He’s quite mild, possibly even a bit sweet, but can develop a kick if I give him 10-15mins on the oven before incorporating into the dough.

Bazooka Pete is fed twice a day at peak, I try not to let him fall. He takes between 10-12 hours to peak. He’s fed 1 part starter, 4 parts strong white flour, 1 part brown flour and 5 parts water at 32C, never hotter but cooler when the weather is hot. He’s always been fed with Wessex Mill’s flour and sometimes goes in the fridge for a short time if the weather’s hot.
