Reading about sourdough and wanting to bake another kind of bread instead of using yeast.

It is very stretchy and iI sometimes switch to weat flour depending on what I want to bake. It does not smell sour and is quite bubbly.

Wholeweat fleur 30/30 at room temperature for 3 days. That is how I started in 2020.
