As my wife is gluten sensitive, I wanted to do something special for her as she missed sourdough bread.

Works beautifully. I do have to make a "faux" gluten, but with my flour mixture it works really well. Has a very nice tart aroma!

Discard to remaining 150g of cold starter. Add Room temp Distilled water Add Gluten Free flour Proof 100 degrees for 12 hours

To my existing starter: Discard all but 150g of starter. Add distilled water at room temp. Mix well, then add King Arthur Gluten free flour. Proof 100 degrees for 12 hours
