Characteristics

It has a mix of sweet and sour smell. It does not have a slightly acidic note, but its main taste is sweet with a bit dairy aftertaste. It is strong enough to keep long fermentation (panettone). The texture is porous with small uniform bubbles at the beginning of the rising process and then bigger inhomogeneous bubbles.

Starting ingredients

  • 66% White wheat flour
  • 33% Water

Feeding ingredients

  • 100% Flour
  • 50% Water

I weight the total sourdough mass. Then I keep the amount ( X) that I want to refresh. Then I add X amount of flour.

Then I add X/2 amount of water.

Working method

I used white wheat flour of low or medium strength into the sourdough. I have changed brand during the years.
