I love the taste of sourdough, and decided to try my hand at baking with it. I've tried other starters in the past, but am hopeful that this one will last for a long time.

Characteristics

Eleanor is a bit on the slow side. She takes 5-6 hours to double, and had tripled in 8 hours on a couple of occasions. Once, she tripled, fell back to double, and then re-surged to triple again! It takes a REALLY long time to get a loaf to rise, but I have had fairly good results with the loaves I have made.

Recipe

Starting ingredients

  • 60% All purpose flour
  • 30% Whole wheat flour
  • 10% Rye flour

Feeding ingredients

  • 5g Starter
  • 15g Flour
  • 15g Water

For general feedings I use 5g of starter in a bowl on my scale and add 15g of flour and 15g of water. I store the starter in a glass Mason jar on my counter.

Working method

My flour is a mix of 60% unbleached all-purpose flour, 30% whole wheat flour, and 10% rye flour. For general feedings, I feed on a 1:3:3 ratio twice a day.

Result

I've made a few decent loaves of bread with Eleanor. Still working on getting a good oven spring and decent crumb.
