A friend gifted me a bread cookbook, and I wanted to bake my way through it. Naturally it contained recipes for sourdough bread.

Characteristics

Slow to rise, but steady and unstoppable once it gets going. Smells like banana liquor, irresistable to sniff the jar as you pass by. The bread has a citrusy lemon flavor. Super yummy!

After starter had matured, I continued to feed it using equal parts wheat flour and water to how much starter remains in the jar. 300g starter in jar. Discard (or use) 200g starter. 100g starter remaining in jar, add 100g flour, 100g water.

Working method

Started using the pineapple juice method and whole wheat flour.
