The buzz about it in food and health industry. Its also the way it was represented, requiring more skill and effort that made me try it.
Characteristics
Alpha is mild in flavour profile with more of lactic acid smell.It requires 2 to 3 feed to wake it from nap.It is kept in fridge when not in use and is fed every 3 weeks. As it is a mix of whole wheat flour and apf, its rising time is moderate. The colour is towards more of white rather then wheatish.It is suitable to make sweet and stiff starters too if recipe calls for.

Starting ingredients
- 25% Whole wheat flour
- 25% Organic apf
- 50% Water from ro
Feeding ingredients
- 14.28% Starter
- 21.42% Whole wheat flour
- 21.42% All purpose flour
- 42.85% Water

Take out the Starter from fridge. Discard all but 20 gm of it.
Add 30 gm of Whole wheat flour
Add 30 gm of Organic APF
Add 60 gm of drinking water from RO
Mix everything
Label it with date and feed ratio
Keep it in fridge

Working method

Alpha is around four years old and was made from scratch.It is a mix of whole wheat flour (Sharbati,Indian) and organic apf. It is kept in fridge at 1:2:2 ratio and fed every two to three weeks. When activated, it is at 100% hydration. It has quite good strength and is used in making artisan and enriched Sourdough Breads
