Characteristics

Personally i dont like too sour so i use sweet and sour fruits as base for my starter. Good texture,elasticity, crumbly,crust as well.

Starting ingredients

  • 200g Green apple
  • 200ml Water
  • 2.5% Sugar

Feeding ingredients

  • 800g Bread flour
  • 800g Water
  • 400g Starter

Using 50% starter to feeding recipes.mix all together store back in fridge

Working method

Soak the sour green cubed apple in water ( 0 chlorine )with 2% sugar ,air tight store at room temperature for 7 days. Ready to feeding.
200g Green apple 200ml Water 2.5% Sugar
