Like everyone else, I had time on my hands during the Covid pandemic. I’ve always been a baker, but I’d never tried sourdough and was looking for a challenge.

I live in the Caribbean, so it’s rather warm (always), and my starter gets to a full foamy bubble within about 3 hours of feeding. I’ve always found the slightly fruity sour smell of it pleasant rather than offensive.
