After working in a bakery during uni I became interested in working with dough and the alchemy of baking. Now I enjoy the process as a creative outlet.

Can be temperamental after long periods in the cold. When healthy, delivers a wonderful open crumb, fruity acidic aromas.

  • 30g Rye flour
  • 60g Filtered water

Discard excess starter

Add 50% rye meal 50% rye flour
30g Rye meal 30g Rye flour

Add 100% filtered water
60g Filtered water

Stir vigorously and leave for up to 12 hours (less than 5 when weather is > 35 degrees) into large bubbles visible. Remove portion for levain and leave mother in fridge.
