  • 60g Filtered water

Add 50% rye meal 50% rye flour
30g Rye meal 30g Rye flour

Add 100% filtered water
60g Filtered water

Stir vigorously and leave for up to 12 hours (less than 5 when weather is > 35 degrees) into large bubbles visible. Remove portion for levain and leave mother in fridge.
