Early in the pandemic, I was trying to keep my 7-yr old child entertained by learning to bake bread. There was no yeast available, but I had injera starter a woman in Phoenix had given me. I started feeding some of it with wheat and rye flour and managed to bake sourdough with it. It is going on year 4!
특징
This starter is very active and always bubbly - it never fails to produce good bread even when I neglect it

When I use the sourdough in a recipe, I just replace it with the same amount (grams) of water and rye flour (100% hydration).

Discard recipes: scones, cinnamon buns, waffles...
