Yes sometimes I am amazed with how it respondes and fermentation is quite faster during summers even though I use less quantity than required % of starter for the dough.

I just try to feed my starter with Organically grown wheat flour

I use the locally grown whole wheat flour “kudrat “ which is good in protein. And my starter is quite happy with it :)

Yes I have made pizzas, indian bhature from sourdough culture which involves deep frying of the flat bread
