Discard (or preferably bake with) 8oz starter.

Add 4oz Tap water to remaining 2oz starter - Mix well

1oz tap water. No pause for dechlorination: just get on with it!

Leave for 24hrs. Then add 2oz water and 2oz flour.

Leave for 24hours. Repeat 2oz step

Use 2oz of starter and add 4oz each of flour and water.

Repeat Step 5 until starter is bubbling with large and small bubbles.
