Baked in a monster wildfires (black) oven results in a thick crust and heavenly moist and chewy crumb. Taste varies depending on ambient temperature, warmer yields less acetic more full flavor while cooler yields a stronger bitey flavor.

Feeding ingredients

I bulk ferment my culture for 3.5 days until use. Feeding with only white flour and water at 100% hydration until the 3rd day when I add 10% whole organic the flour (locally grown and milled) for a boost.
