I created Lowri because Quentin wasn't strong enough as a base starter for creating a pasta madre for my panettone. I started sourdough baking at beginning of 2020.

Caratteristiche

Lowri is super strong, tripling in size, and has a great flavour.

  • 45% Organic strong white bread flour
  • 5% Dark wholegrain rye flour
  • 50% Water

Ingredienti per il rinfresco

  • 5g Lowri
  • 25g Water
  • 22.5g Strong white bread flour
  • 2.5g Dark rye

Discard all but 5g of starter.
5g Lowri

Add 25g water.
25g Water

Add 25g of flour mix (90% strong white bread flour and 10% dark rye) and stir to combine.
22.5g Strong white bread flour 2.5g Dark rye

Organic strong white bread flour - from Shipton Mill. For a strong, well-developed gluten network in the starter, and lots of starch to feed the yeast and LAB.
45% Organic strong white bread flour

Dark wholegrain rye flour - from Dove's farm. For the nutrients and lovely flavour it provides.
5% Dark wholegrain rye flour
