I wanted to make an example to how "easy" it can be to something spectacular and delicious. I work at a youth house where kids come and go as they please with all kinds of different backgrounds and needs. Sourdough baking was just a perfect example to bring them along making something from nothing without having any knowledge or skill. Simply learning by doing.
This starter is my second as the first one died at work during the pandemic. I built this the exact same way on wholemill rye flour. It doubled on day 4 regressed for the next two and on day 7 it bloomed back to more then doubling and it has never looked back since, regardless of being left to almost die, being used sporadically. Super adjustable. Kept at 100% hydration, 25/75 rye/white wheat
