Desire to eat healthy bread and missing the taste of my childhood bread baked in the village I was born in.

I use to say that I have a smart starter because that it is .It makes gorgeous breads no matter what flour I use .Living in the fridge,feed it 2 or three times a week.It only need 8 hours (depend on recipe )to make a preferment ready to use.

- 50g Water
- 50g Bread flour

Process of feeding my starter :
- three times a week I take it off the fridge and weight 10 grams of it.Then add 50 ml of water and 50 grams of bread flour.(ratio : 1:5:5).Put it back in the fridge right away.The rest of about 90 - 100 grams I use to make a preferment (levain) for the bread I will bake next.

After the process of obtaining my starter ,that took two weeks, approximately,I used different method to use it and keep it alive .Feeding it two times a day and keep it at room temperature wasn't convenient for me because my bread was too sour which is why I jump to conclusion my starter is very active .Finally I stoped at keep it in the fridge and feed it as follow,Everytime I make bread.
10g Starter
50g Water
50g Bread flour
Result
I used my starter to make many other products like :pizza,pie, traditional Romanian buns(cozonaci),crackers,pita bread.
