My aunt had been making sourdough in a bread maker for a while and inspired me to try. I also watched “Cooked” on Netflix which fascinated me with the transformative bacteria to the humble ingredients of flour and water.
Charakteristische Eigenschaften
I started very basic, 100% hydration, fed with unbleached bread flour. I am at very high altitude, 7900 ft above sea level. Ronaldo has made everything from basic boule loaves to commercial yeast free puff pastry. Since I’ve started baking with sourdough, I have not bought a single bread product from the store!

When the majority of bubbles have ome to the surface, I know it’s time to feed again. I usually add equal weights of bread flour and water, mix, and repeat when it tells me to.

1/2 cup water

Add one tablespoon flour and one tablespoon water for 7 days. Cover with kitchen dish towel to keep bugs and dust out, but let air in.
