I've been attempting to bake with sourdough for about nine years. I had very dismal results until last year when I discovered Teresa L. Greenway's blog and classes. I wanted a healthier bread. Sourdough is my favorite type of bread.

Characteristics

It's a straight forward starter. 100% hydration. Fed with Bob's Red Mill AP flour and bottled water. Sister is about four months old. It is a creamy color with a pancake batter consistency.

Starting ingredients

  • 100g Bob's red mill ap flour
  • 100g Bottled water
  • 50g Sister starter

Feeding ingredients

Working method

I keep 50 grams of starter on hand. I feed the starter 100 grams of bottled water and 100 grams of flour. Three days prior to baking I feed her twice daily.

Result

Sourdough Waffles

I use the recipe from the King Arthur flour website. They're simply the best waffles ever. Light, crispy and flavorful.

Alaska Sourdough

I use Teresa L. Greenway's recipe for Alaska sourdough. The crust is crispy with a soft, creamy crumb.

Dear Peggy, increasing the file size will slow down the site. It will also increase the data traffic to peoples phones and tablets.
