My Daughter asked about making bread. She was interested in having a go at it. I have tried many times before and this time I decided we could share the experience and work through the trials and techniques to make a good loaf.

Characteristics

Sammy is very young at the moment. He was created on the 12th Jan 2018. We are having a great time experimenting and trying new things and luckily enough we are having quite some success. He is very active and likes to bubble a lot, especially when we let him warm up ready to make a dough.

Recipe

Starting ingredients

  • 100g Organic whoelmeal
  • 100g Water (boiled and cooled tap water)
  • _none 3 peels of potato skin

Feeding ingredients

  • 200g Flour
  • 200g Water (boiled and cooled tap)

Discard all but 200g of Starter.

Add flour and water (boiled and cooled tap water) and mix to combine.

Place in fridge.

Working method

Mix flour and water and add potato skins. Let ferment for 48 hrs at room temperature.
100g Organic whoelmeal 100g Water (boiled and cooled tap water) _none 3 peels of potato skin

Remove potato skins and feed with flour and water. Do not discard any starter.

After 24 hours, fed again. Only removing starter if your container is starting to fill to the top. Only then remove all but 100g of starter and then continue feeding as per above.

Result

Basic Round Loaf

Currently experimenting only with making a white loaf. Once we've mastered that we will try other products.

Pizza Dough

Tried using some excess starter in a pizza dough. It was delicious and nutty. Flavour really added to the pizza.
