Slightly nutty, tastes amazing as pretzels with miscuglio in the dough and served with marinara sauce.
Taste & flavour
This sourdough is fed at room temperature - roughly 65 degrees Fahrenheit.
I do not have an exact recipe; the daily maintenance is more by "feel" than exactitude. In an old crystal candy dish I mix all purpose flour and filtered water until it is firm enough to stand in the center. Each day I discard a portion and mix more flour and water. When planning a loaf I collect the discards into mason jars and feed that as well as the base for my loaves.
Mixed with miscuglio and left to leaven, rolled in minced garlic and brushed with egg. Baked and served with marinara.
