My ex husband wanted to try it. He was obsessed with bread making. This starter began in 1890 so we were determined to not kill it. So, it;s actually 136 y.o. now in 2020. We had made starer ourselves and were not quite successful.

Characteristics

Cowboy is vigorous & tastier when used more. The first piece tastes like it has parmesan in it (it does not). Originating in WY, this starter is 136 y.o. It was given to a traveling family in 1979 by a cowboy; a wool buyer traveling between WY and MT. At that time, it was 95 y.o. It spent all those years traveling in saddle bags. I have shared and this starter is now in CO, VA, WA, & Norway.

Recipe

Starting ingredients

  • Cup 1.25
  • tbsp 0.75
  • Cup 1
  • tsp 0.25
  • Cup 3

Feeding ingredients

  • Cup 1

Stir together and remove 1.5 cups

In separate bowl, stir together 1 C flour and 1 C filtered water

Add mixture from #2 back to starter. Replace in fridge
