Recipe

Starting ingredients

  • tsp Sugar
  • tsp Salt
  • 4oz Scalded milk
  • % Flour

Feeding ingredients

  • 16oz 2 cups unbleached flour
  • 12oz Water

keep refrigerated. at 35F for storage. Then remove half and place in stainless steel bowl and add 2cups flour and 1 1/2 cups water, then place in proofing box. Repeat throwing half out. doing this more frequently removes necessity of the repeat. Save half and put in back shelf of refrigerator.

kneed in KitchenAid. add flour as necessary until dough pulls off side cleanly of stainless steel bowl
