I was sick of the UK store bought white mush, called bread. It did not do me any good. I come from a country where we always ate fresh, homemade bread and I wanted to keep that alive, despite the fact that I have moved abroad. There is nothing more inviting than the scent of a freshly baked sourdough loaf, singing on your counter.

Characteristics

We became well acquainted in the last year and a half and he works well in the proverbially cold and wet English climate. Most of the time he used to reside in the fridge, but the baking needs have amped up slightly (ie baking multiple times per week), so he's on the kitchen counter most of the time now. His scent is floral and sweet, which results in loaves with a lovely soft and milky taste.

Recipe

Starting ingredients

  • 100g White flour
  • 100g Water
  • 100g Organic stoneground white
  • 100g Water

Feeding ingredients

  • 20g Norman
  • 50g Stoneground white flour
  • 50g Water

Norman consists of about 10-20g of leftover starter, 50g of stoneground white flour and 50g of tap water. He is refreshed once weekly or more (in case there is more time to bake). He wakes up after about 2 hours and is ready in about 6 hours.

Working method

Norman started his life humbly, from a store bought flour and tap water. It took him a while to come to life, but when he did, boy was he happily bubbling away with a lovely floral scent and soft texture.

After a few months Norman started receiving a better treatment. A local mill's flour - Organic Stoneground White Flour (strong Canadian one). The water used is still tap, but gives good results, so we'll keep it at that. :)
