Starting ingredients

  • 100g Rye, whole flour
  • 100ml Water

Feeding ingredients

  • 50g Rye flour 1370
  • 50g Water
  • 10g Sourdough starter

I keep my sourdough starter strictly separate from the sourdough used for baking. The starter gets refreshed once a week, mixing 10g of the starter with 50g of whole rye flour (Type 1370) and 50g of warm water.

Working method

First Day: Mixing whole rye flour with water in a bowl placed at a warm spot. Stiring up after 12 hours.

Second Day: Adding whole rye flour and water, stiring thoroughly, replacing at a warm spot. Stiring up after 12 hours.

Third Day: Adding whole rye flour and water, stiring thoroughly, replacing at a warm spot. Stiring up after 12 hours.

Fifth Day: Adding whole rye flour and water, stiring thoroughly, replacing at a warm spot. Stiring up after 12 hours.

Sixth Day: Sourdough is ready. Taking 10g and Mixing it with 50g rye flour (Type 1370) and 50g water. That's my sourdough starter since then. The rest of the first sourdough can be used for baking the first bread. It might need some extra yeast since it is a young sourdough.

Rye Loaf

Only rye flour, half whole flour. Made only with Mountain Rye sourdough. Very tasty!
