Wanted to produce my own italian style bread (Pane di Altamura) and reduce yeast in pastry.

Recipe

Starting ingredients

  • 100g Water
  • 100g Wheat flour (type 1050)
  • 4g Ferment initiator
  • 50g Water
  • 100g Ripe fermented dough (1. step)
  • 150g Wheat flour (type 1050)

Feeding ingredients

  • 50g Water
  • 100g Madre
  • 100g Wheat flour (type 1050)

Mix the solid Madre mixture in pieces, place in warm water, let swell for about 5-10 minutes, add wheat flour and knead well. Make the dough into a ball, cut it into 1/3, cover and let it ripen until the volume has doubled to triple. It takes about 3-4 hours at 28° C.

Working method

First, activate the ferment Initiator by adding the same amount of water and flour. Let grow for about 15 hours at 29° C until the quantity has doubled. For Ferment Initiator look at: https://www.brotkruemel.com/sauerteig-und-fermentteigstarter/62/fermentteig-starter?c=16

To make the ferment dough solid (Madre), the fermentation is continued at a ratio of 1: 2: 3 = 1 part of water: 2 parts of ripe fermented dough: 3 parts of flour. Mix water and ferment dough, add wheat flour and knead well. Make the dough into a ball, cut it into 1/3, cover and let mature for about 4 hours at 28° C. At the end of the maturation period the volume should have doubled or tripled.
