I needed good bread. Being from Germany, I could not find acceptable bread, so I made my own. I could easily work with yeast, but the natural fermentation process fascinated me.
Caractéristiques
This is a 100% hydration wheat sourdough, fed with KAF AP flour once a day. When fully developed it gets these frothy bubbles on top.
